Nicaragua Treating Us Good
So this weekend was a long one... We had so much fun though. We had to take a 2.5 hr bus ride to Managua, but it wasn't like a luxury tour bus, it was crappier than an old school bus. But besides the fact that there was about 20 people to much on the bus and we had to wake up at 4:30am to catch the bus 45 min later it was amazing. While I'm here I'm going to look at the whole experience and realize how amazing it is that I get to do something like this. Well here's a few pictures from this weekend. Leaving tomorrow
My week here in Florida is coming to a close. Im flying out tomorrow morning to start my trip to Nicaragua!! So today I'm spending time with my familia and soaking up the sun.
Im already a lil sad about leaving, so I'm nervous about what my emotions will be like tomorrow...

Just a quick farewell lunch
Today is the day, We are finally leaving after delaying the trip by a couple days. So I decided to make some quick tofu wraps for the fam.
Ingredients:
Tortilla Wrap
Organic Gmo-free ToFu
Coconut oil
Tomato
Avocado
Lettuce
Rosemary
Black Pepper
Oregano
Lime Juice
1st off, I cut the ToFu into thin strips (3). Then sautéed the tofu in a little bit of Coconut oil. Sprinkled the 3 seasonings-black pepper, rosemary, and oregano-on top of the pieces of tofu. Sautéed until a little crispy.
Then, I just cut up all the vegetables put them on the wrap. And then once the tofu was done I put that on the top and Voila! A delicious, protein equipped fast lunch.

Let the Packing Begin
So I decided that I would start packing today. I'm leaving in 3 days, so I thought it was time for this process to begin. You know as you pack you think of things you still need to buy or put in your luggage, so it becomes a pretty decent sized list... Well I already have a few items on that list and I just started packing. I wonder how long that side-list will get...
I know all this packing, emotional goodbyes, and work will be worth it in the end. I just can't wait for that feeling to come.

Yum...
Last night for dinner I made a Grilled Veggie CousCous Salad. It was delicious.
Ingredients:
1 Box of couscous 1 Can of chick peas/Garbonzo beans
3 tbs Balsamic vinegar
2 tbs Olive oil
1 tsp Black Pepper
1 Onion
2 Bell Peppers-red,yellow,green-whatever you have.
2 Zucchini 2 Tomatoes
1. Cook the box of couscous. (I used trader joes brand.) Make it till its Lightly brown (about 5 min). Then put 1 3/4 cup water in. Let simmer until all the water was gone.
2. Grill the veggies. Cut the zucchini and peppers into big slices. Put a little olive oil on them. Grill for 10-15 min.
3. Combine in large bowl. Chopped tomatoes. Onion. Black pepper. Olive oil balsamic vinegar. And chick peas.
4. Take the couscous off the stove and put it into the mixture in your large bowl.
5. Finally, take the veggies off the grill and cut them into bite size pieces and mix them into the bowl.
VOILA!
This recipe was sooo simple, easy, and pretty fast! It Probably tops took me 30 min. I was very impressed with how good it tasted. You might need to add a little extra pepper if you want more flavor. If you end up trying it, Enjoy!

Back on Track

Earthquake/Tsunami in Japan
This morning I woke up and saw on my phone a bunch of pictures that said "Pray for Japan." I was wondering what had happened. So I went on to msn.com and started reading about the horrible tragedy that happened to the NorthEastern coast of Japan. The biggest earthquake that has ever hit Japan rated at 8.9 on the Richter scale happend this morning. So far there has been hundreds of people reported dead after the tsunami that followed the earthquake, and the number will continue to rise. There was over a dozen after shocks the biggest one being 7.1. Now there is news about it hitting hawaii, and eventually later today hitting the coast of California. This giant earthquake will be going in the top 10, unfortunately.

Our night:
So besides the fact that we had some yummy mexican food tonight. We ended up going to the best Frozen Yogurt place by the beach. Its super modern inside and the flavors are amazing! I was so ecstatic to take cami there for her first time so she could finally try my favorite flavor, Taro. :) yummyyy....
